Jason's Recipe: SPINACH SALAD

I am so excited to announce that my husband Jason who clearly owns naturally unbelievable cooking skills agreed to have a section on my blog and share some of my favorite recipes with you :) Yesterday I took beautiful shots of spectacular Italian dinner that he made, Spinach Salad served with Pan- seared Shrimp Pasta (next recipe on the blog).

wild mushroom, white asparagus, pancetta
Boil water in a medium sauce pan. Boil white asparagus for 2 minutes, then immediately place in ice water. Remove asparagus from ice water and let it dry.
Dice pancetta and saute with a touch of olive oil over medium heat until brown. Set pancetta aside to cool.
Reserve fat, add another dash of olive oil and saute wild mushrooms until brown. Set mushrooms aside to cool.
Mix spinach with a little bit of olive oil, lemon juice, salt and pepper. Top the spinach with the mushrooms, asparagus and pancetta and serve.
